Chateau Simone is owned by the Rougier family for generations, also responsible for the establishment of Palette AOP in 1948. Jean Rougier put forth the application for the establishment of the appellation, just east of Aix-en-Provence. The appellation covers 50 ha on Langesse limestone, facing Mount Sainte Victoire, enjoying a unique microclimate. Palette produces white wines based on Clairette, Grenache Blanc and Bourboulenc, and Grenache, Mourvedre and Cinsault for Red and Rose wines. In the vineyard farming follows organic principles without the use of chemical fertilizers or pesticides and incesticides. Grapes are hand harvested, sorted in the vineyard and cellar and aged in wood in various different sizes.
