The Savart family's wine story started in 1947, when Fred's grandfather, Rene, purchased vines in the Premier Cru village of Écueil, just south of Reims. Fred's father Daniel took over in the 1970s, with Fred joining the family domaine in the early 1990s. The family used to sell grapes to the local Cooperative, but Fred ended the practice in 2001 before he fully took over in 2005.
Frederic Savart is currently one of the most sought-after growers in Champagne, praised for their singularity, depth and personality. Sadly for us, his wines have become more elusive and difficult to find.
In the cellar, they use a combination of stainless steel and barriques for fermentation and aging. The wines may or may not go through Malolactic fermentation, depending on the vintage and the cuvee, and they age the wines under cork for tirage. Dosage tends to be kept at low levels.
The Wine: During the difficult 2021 vintage, Fred did not make the majority of his Pinot noir based cuvées, so he began to make this special cuvée from two Premier Cru villages, Écueil with chalky soils and Trépail, with clay and loamy soils. Since then, he has continued making the wine from purchased grapes from Trépail (chalky soils) and using his Chardonnay from Écueil (clay/loam)
